Hikari knives are extremely sharp and must be handled with care.
To protect both your knife and your safety:
- Use this knife only for cutting and slicing.
- Cut boneless meat, fish, fruits, herbs, and vegetables only.
- Do not cut bones, frozen foods, hard pits, shellfish shells, or very hard produce.
- Do not stab, pry, twist, scrape, or use the knife as a screwdriver, lever, or tool.
- Use only on wood or soft plastic cutting boards.
- Never put your knife in the dishwasher.
- Wash by hand and dry immediately after cleaning.
Improper use may chip, crack, dull, stain, or damage the blade and may void the warranty.
Proper Cutting Technique
Hikari knives are designed for a smooth slicing motion, not for forceful chopping or impact cutting.
Use a gentle forward-and-down slicing motion, then lift and reposition the blade for the next cut. Let the sharpness of the knife do the work. Avoid excessive force.
Always keep your fingers clear of the cutting path and work carefully, especially when using the knife for the first time.
Cutting Surfaces
The surface you cut on has a major impact on edge life.
Recommended
Use wood or soft plastic cutting boards. Softer woods, such as hinoki, are especially gentle on fine knife edges.
Not Recommended
Do not cut on glass, marble, granite, ceramic, tile, metal, or acrylic surfaces. These materials can quickly dull or chip the edge.
Washing and Drying
Never wash your knife in the dishwasher.
Dishwashers can damage knives because:
- high heat can reduce edge performance
- harsh detergents can damage steel and handles
- long exposure to moisture can encourage corrosion
- contact with other items can chip or scratch the blade
Wash your knife by hand using warm water and mild dish soap. Rinse thoroughly and dry immediately with a soft towel. Do not leave the knife soaking in water.
Storage
Store your knife in a knife block, saya, sheath, knife roll, magnetic strip, or in-drawer knife tray.
Do not store an unsheathed knife loose in a drawer, as this can damage the edge and increase the risk of injury.
